Over the weekend, we served our 75,000th meal since our redeployment earlier this month to Eastern Kentucky.

When Sen. Rand Paul's office called and asked us to help meet what has become a critical need in this flood-devastated region, we really didn't know what to expect. We prepared for 2,000 or so meals a day, but almost immediately, the demand was more than double our expectations.

Once word spread, people were lining up for HOURS in their cars, waiting on hot meals. The lines continued for days and so has the demand. Yesterday, we served another 5,000 meals to the folks here.

While we continue to meet this immediate need, I have been in contact with state officials to see if there is an opportunity for an even longer term recovery effort to this region that would be spearheaded by Mercy Chefs. I will let you know how that develops.
